Turn on the heat and watch the thermostat. It should start to open at about 180 and be fully open at about 185. Then turn off the heat and watch again. It should be fully closed at around 178. If you are within a few degrees of these numbers, then the thermostat is OK. If not, then replace the thermostat (again).

2017 colorado had similar problem. All gages, continual warnings, speedometer, tach, fuel, temp gage all stopped working. Outdoor temp blank, heater changed from F to C reading. all kinds of funky stuff.
