Nope, just opening your Quick Menu, clicking on the cog symbol marked Utilities, then the Minotaur symbol marked Disable Minotaur AI. I'm assuming the option is only there when you have it as your Primary Exocraft though. Whoops wrong subreddit. I didn't think anyone would post on this thread since it's kinda old.
Bring up your 'summon/recharge/change multi-tool/etc.' menu, letter X by default on PC, scroll all the way left to the gear icon, and in that submenu will be an option to disable the Minotaur AI. It instantly goes dormant. Minotaur is fun too offering protection but it can not be 'driven' easily. If the terrain is mountainous and full of flora the bike upgrades weaves in and out of obstacles.
