As others have said, 3% tipout of total sales is very standard, plus more to bar. If you make on average 15% in tips. Youll be giving about 20% of your tips away to boh which seems fairly reasonable. So you sell 1000, make 150 in tips and give boh 30 bucks plus 10 bucks to bar. Leaving you with 110 takehome.
