To replace the thermostat you have to remove the alternator as its above the thermostat. You have to disconnect the battery which you may or may not have done for the timing belt. That might why they said 2 hours maintenance. I just bought an OEM thermostat/housing in a Ford box, for $40.

It just indicates the doors are locked which automatically occurs when you are driving. If you hit the unlock button on the door panel it will go off. As for the OK button I'm not sure. Using the 4 way arrows should navigate you through the menus and OK will select.

That sounds like some kind of electrical interlock problem. The shifter has solenoids to lock things down and unlock them, and it has an encoder to report what gear you're in.
