Thought it would be plain sailing after that but even though I did my medical (early 2021) and biometrics (Oct 2021 as postponed a few times due to quarantine), there are still no updates on my I-485 process. Starting to worry at this point as almost 2 years since initial filing.

Congrats! It does look like you are on a finish line. But to be honest, it is hard to say, all cases are so different. But, if you ask my guess, it could be a day after your biometrics or could be 10-15 days. If you were recommended on all counts, eligibility and admissibility passed then expect any day now an email with a decision.
